Lemon Pepper Salmon with Sautéed Veggie Medley

This dish features perfectly pan-seared salmon seasoned with lemon pepper and herbs, served with a rainbow medley of sautéed vegetables — including broccoli, bell peppers, carrots, and sweet corn. Bright, nutritious, and ready in minutes!

For the salmon:

2 salmon fillets

1 tbsp olive oil

½ tsp lemon pepper seasoning

Salt to taste

Juice of ½ lemon + 2 lemon wedges for garnish

For the sautéed veggies:

1 cup broccoli florets

½ red bell pepper, sliced

½ yellow or orange bell pepper, sliced

½ cup corn (fresh or frozen)

1 carrot, diced

1 tbsp olive oil

Salt & pepper to taste

Optional: pinch of garlic powder or fresh herbs

Season salmon with lemon pepper, salt, and a light squeeze of lemon juice.

Heat oil in a skillet over medium heat. Sear salmon skin-side down for 4–5 minutes, then flip and cook another 3–4 minutes until golden and cooked through.

In another pan, heat olive oil and sauté broccoli, carrots, and bell peppers for 5–6 minutes. Add corn last and cook another 2 minutes. Season with salt, pepper, and herbs.

Plate salmon with veggies on the side and garnish with lemon wedges.
