Ingredients

200 g rigatoni or penne (whole-grain if desired)

2 medium zucchini, sliced into half-moons

2 tbsp olive oil

2 garlic cloves, minced

Juice & zest of 1 lemon

¼ tsp chili flakes

50 g Parmesan, grated

Salt & black pepper to taste

Fresh parsley or basil, chopped (for garnish)

Cherry tomatoes, halved

Grilled chicken or shrimp for protein

Instructions

Cook Pasta

Boil pasta in salted water according to package instructions

Reserve ½ cup pasta water, then drain

Saute Zucchini

Heat olive oil in a pan over medium heat

Add garlic and chili flakes, saute 1–2 minutes

Add zucchini slices, cook 4–5 minutes until tender but still slightly crisp

Season with salt & pepper

Combine Pasta & Sauce

Add drained pasta to the pan with zucchini

Toss with lemon juice, zest, and a splash of reserved pasta water for creaminess

Remove from heat and stir in Parmesan

Serve
