Ingredients

1½ cups cherry or grape tomatoes, halved

2 tbsp extra virgin olive oil

1 tbsp balsamic vinegar or red wine vinegar

1 small garlic clove, finely grated

1 tsp honey (optional, for balance)

1 tbsp chopped fresh basil or parsley (or both)

½ tsp dried oregano

Salt and black pepper to taste

For the whipped feta:

1 cup (about 6 oz) feta cheese, crumbled

¼ cup Greek yogurt or cream cheese

1 tbsp olive oil

1 tsp lemon juice

To serve:

Crusty bread, pita chips, or warm flatbread

Instructions

1. Marinate the Tomatoes:

In a bowl, combine halved tomatoes, olive oil, vinegar, garlic, honey, herbs, oregano, salt, and pepper.

Stir well, cover, and let sit at room temperature for at least 20 minutes.

2. Make the Whipped Feta:

In a food processor, blend feta, Greek yogurt, olive oil, and lemon juice until smooth and creamy.

Taste and adjust seasoning if needed.

3. Assemble the Dip:

Spread whipped feta on a shallow serving plate or bowl.

Spoon the marinated tomatoes (and all their juices) over the top.

Finish with a drizzle of olive oil, extra herbs, and red pepper flakes if desired.
