Base

1 cup cooked green or brown lentils

1½ cups cherry tomatoes

3 garlic cloves, lightly smashed

3 tbsp extra-virgin olive oil

½ tsp dried oregano

½ tsp dried thyme

Salt & black pepper, to taste

Cheese

1 block (150–200 g) feta cheese

Finish

Fresh parsley or basil, chopped

Lemon zest (optional)

1️⃣ Preheat & Assemble

Preheat oven to 200°C / 400°F.

In an oven-safe skillet or baking dish, add lentils, cherry tomatoes, garlic, olive oil, oregano, thyme, salt, and pepper.

Toss gently.

2️⃣ Add Feta

Place the feta block in the center.

Drizzle a little olive oil on top of the feta.

3️⃣ Bake

Bake uncovered for 30 minutes, until tomatoes burst and feta is soft and lightly golden.

4️⃣ Finish & Serve

Gently mash the feta and tomatoes into the lentils.
