Ingredients:
- 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup diced tomatoes

- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper, to taste
- 1 cup crumbled feta cheese (optional)
- Fresh parsley, chopped (optional)
Instructions:
1. Cook orzo according to package instructions.
2. Drain and set aside.
3. In a large skillet, heat olive oil over medium-high heat.
4. Add chicken and cook until browned, about 5-6 minutes.
5. Remove from heat and set aside.
6. In the same skillet, add garlic, oregano, and thyme.
7. Cook for 1 minute, until fragrant.
8. Add diced tomatoes, chicken broth, salt, and pepper to the skillet.
9. Stir to combine.
10. Add cooked orzo and chicken back to the skillet.
11. Stir to combine.
12. Reduce heat to low and simmer, covered, for 10-15 minutes or until the liquid has been absorbed and the orzo is tender.
