 Ingredients 

 Turkey Meatballs

400 g lean ground turkey

1 egg

¼ cup breadcrumbs or oat flour

2 tbsp onion, finely grated

1 clove garlic, minced

1 tsp dried oregano

½ tsp dried basil

Salt & black pepper, to taste

1 tbsp olive oil (for brushing)

Coconut Rice

1 cup basmati or jasmine rice

½ cup light coconut milk

1 cup water

¼ tsp salt

Oven-Baked Veggies

1 cup zucchini, sliced

1 cup bell peppers

½ cup carrots, sliced

½ cup red onion

1 tbsp olive oil

½ tsp dried thyme or oregano

Salt & black pepper, to taste

 Instructions

1️⃣ Prepare the meatballs

Preheat oven to 200°C (400°F).

In a bowl, mix turkey, egg, breadcrumbs, onion, garlic, oregano, basil, salt, and pepper.

Form small meatballs and place on a lined baking tray.

Lightly brush with olive oil.

2️⃣ Bake the meatballs

Bake for 18–22 minutes until golden and cooked through.

3️⃣ Cook the coconut rice

Rinse rice well.

Add rice, coconut milk, water, and salt to a pot.

Bring to a boil, cover, and simmer on low for 12–15 minutes.

Fluff with a fork.

4️⃣ Roast the vegetables

Toss veggies with olive oil, herbs, salt, and pepper.

Roast on a tray at 200°C (400°F) for 20–25 minutes, turning once.

5️⃣ Assemble the bowl

Serve coconut rice topped with turkey meatballs and roasted veggies.

Optional garnish: parsley, lemon wedges, or a spoon of Greek yogurt.
