 Ingredients

Cookie Dough

1 cup rolled oats

¾ cup all-purpose flour

½ tsp baking powder

¼ tsp salt

⅓ cup olive oil

⅓ cup honey or sugar

1 eggs

1 tsp vanilla extract

1 tbsp lemon zest

2 tbsp fresh lemon juice

Optional Topping

2 tbsp powdered sugar

1 tsp lemon juice (for glaze)

Instructions

1️⃣ Preheat the Oven

Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.

2️⃣ Mix Dry Ingredients

In a bowl combine oats, flour, baking powder, and salt.

3️⃣ Mix Wet Ingredients

In another bowl whisk olive oil, honey (or sugar), egg, vanilla, lemon zest, and lemon juice.

4️⃣ Combine the Dough

Add the dry ingredients to the wet mixture and mix until a soft dough forms.

5️⃣ Shape the Cookies

Scoop tablespoon-sized portions onto the baking tray and flatten slightly.

6️⃣ Bake

Bake for 12–15 minutes until the edges turn lightly golden.

7️⃣ Add Optional Glaze

Mix powdered sugar with lemon juice and drizzle over cooled cookies.
