Ingredients:
For the Patties:
1½ cups mashed sweet potato (about 2 medium, cooked and peeled)
1 can black beans (15 oz), drained and rinsed
½ cup finely chopped red onion
2 garlic cloves, minced
½ cup breadcrumbs (or oat flour for gluten-free)
1 tablespoon olive oil (for frying)
1 teaspoon ground cumin
½ teaspoon smoked paprika
1 teaspoon dried oregano
Salt and black pepper to taste

For the Rice:
1 cup long-grain white rice
2 cups water
Pinch of salt
1 teaspoon olive oil

Juice of 1 lime
1 tablespoon olive oil

Instructions:
1. Cook the Sweet Potatoes (if not already done):
Peel and dice sweet potatoes. Boil or steam until fork-tender, about 12–15 minutes. Mash and let cool slightly.
2. Make the Rice:
Rinse rice under cold water. Bring 2 cups of water to a boil, add rice and salt, reduce heat, cover, and simmer for 15–18 minutes. Fluff with a fork.
3. Make the Patties:
In a large bowl, mash black beans slightly, leaving some texture. Add mashed sweet potato, onion, garlic, breadcrumbs, cumin, paprika, oregano, salt, and pepper. Mix until combined and firm enough to shape. Add more breadcrumbs if too soft.
Form into 8–10 small patties.
4. Pan-Fry the Patties:
Heat olive oil in a non-stick skillet over medium heat. Cook patties in batches for 4–5 minutes per side, until golden brown and crispy. Drain on paper towels.
5. Make the Lime Drizzle:
Whisk together lime juice, olive oil, maple syrup, garlic, salt, and optional herbs. Set aside.
6. Assemble and Serve:
Spoon white rice onto plates, top with warm patties, and generously drizzle with lime dressing. Garnish with extra herbs or lime zest
