INSTRUCTIONS FOR mediterranean loaded baked potato recipe:

⭐Preheat the oven to 375 degrees Fahrenheit.

⭐Wash and scrape the potatoes thoroughly. Dry thoroughly.

⭐ Use a fork to poke holes all over the potato, perhaps 5 to 6 times total.

⭐Rub the potatoes with olive oil and kosher salt, then puncture them several times with the tines of a fork.

⭐Arrange the potatoes on a baking sheet, and bake for 1 hour or until potatoes are incredibly soft and fork-tender and the skin is nice and crunchy (may take up to 75 minutes).

⭐While the potatoes are baking, prepare the Tzatziki sauce according to this recipe, if using, and the remaining toppings.

⭐When the potatoes are done, take from the oven and allow to rest for 5 minutes. Slice each open.

⭐Slice each open wide and spoon the potato flesh into a basin.

⭐Combine 1 tablespoon olive oil, salt, pepper, and dried oregano. Mash with a fork.

⭐Now, scoop the mashed potatoes back into their skins.

⭐Reshape the potatoes with your hands if necessary, then top with the Tzatziki sauce and remaining Mediterranean toppings to taste. Enjoy!

NOTES:

Cook’s Tip: Because ovens vary, roasted potatoes might take anywhere from an hour to 75 minutes. You want the insides to be soft and the outsides to crisp up nicely. To test, insert a fork into the thickest section of a potato.

1. For flawlessly crisp skin, lightly coat it with olive oil and season with salt. It adds flavor to the dull potato and makes it crunchy.

2. Bake the potatoes at a moderate temperature to achieve a creamy flesh. In this baked potato dish, I preheat my oven to 375 degrees Fahrenheit and bake the potatoes for an hour. It produces a fluffy potato interior and a crispy skin.

3. Before adding the potatoes, ensure that your oven is thoroughly warmed. This helps ensure that the potatoes cook correctly and evenly.

4. Go the extra mile to make sure the potato flesh is fluffy and well-seasoned. As shown in the recipe below, once the potatoes have cooled enough to handle, transfer the flesh to a bowl, drizzle with olive oil, and season to taste. Then spoon the potato flesh back into the skins. This carries a lot more taste.
