Ingredients
For the Pastry:
1½ cups (190g) all-purpose flour
½ tsp salt
10 tbsp (140g) cold unsalted butter, cubed
¼ cup (60ml) ice water
For the Filling:
2 tbsp olive oil
1 large onion, thinly sliced
8 oz (225g) mushrooms (cremini or mixed), sliced
2 cups fresh spinach, roughly chopped
2 cloves garlic, minced
½ tsp dried Oregano
½ tsp dried thyme (or fresh herbs if available)
Salt & black pepper, to taste
For Assembly:
½ cup crumbled feta cheese (or goat cheese)
1 egg (beaten, for egg wash)
Fresh parsley or dill, for garnish
Instructions
1. Make the Dough (if homemade):
In a bowl, mix flour + salt. Cut in butter until mixture resembles coarse crumbs.
Add ice water gradually, mixing until dough just comes together.
Shape into a disk, wrap, and chill for 30 min.
2. Prepare the Filling:
Heat olive oil in a skillet over medium heat.
Add onions, cook ~10 min until soft and caramelized.
Add mushrooms, cook until golden and moisture evaporates (~7 min).
Stir in garlic, spinach, oregano, thyme, salt, and pepper. Cook until spinach wilts. Remove from heat, let cool slightly.
3. Assemble Galettes:
Preheat oven to 400°F (200°C).
Roll dough into 4 small circles (or 1 large, ~10–12 inch).
Place filling in the center, leaving a 1½–2 inch border.
Sprinkle feta over filling.
Fold pastry edges over filling, pleating as you go.
Brush crust with beaten egg.
4. Bake:
Transfer galettes to a parchment-lined baking sheet.
Bake 30–35 min, until crust is golden brown.
5. Finish & Serve:
Let cool slightly, garnish with fresh parsley or dill.
Serve warm or at room temp.
