Soft tortillas spread with a creamy herbed cheese, layered with briny olives, sweet roasted red peppers, and tangy feta, then rolled and sliced into elegant pinwheels.

Ingredients

4 large flour tortillas (or lavash wraps)

200 g cream cheese, softened

½ cup feta cheese, crumbled

½ cup roasted red peppers, finely chopped (jarred or homemade)

⅓ cup black or Kalamata olives, finely chopped

1 tbsp olive oil

1 tbsp lemon juice

1 clove garlic, finely grated

2 tbsp fresh parsley or dill, chopped

¼ tsp black pepper

Instructions

1. Make the Creamy Spread

1. In a bowl, mix cream cheese, olive oil, lemon juice, garlic, herbs, and black pepper.

2. Gently fold in feta.

2. Assemble

1. Lay tortillas flat.

2. Spread cheese mixture evenly, right to the edges.

3. Sprinkle roasted red peppers and olives evenly over each tortilla.

3. Roll & Chill

1. Roll tortillas tightly.

2. Wrap in cling film.

3. Chill for 20 minutes for clean slices.

4. Slice & Serve

Slice into 2 cm pinwheels using a sharp knife.

Serve chilled or at room temperature.
