Total Time: 15 minutes
Ingredients
1 bunch fresh asparagus (about 1 lb / 450g), woody ends trimmed
½ cup walnuts, toasted and roughly chopped
¼ cup shaved or grated Parmesan
2 tbsp fresh lemon juice
2 tbsp extra virgin olive oil
½ tsp lemon zest
Salt and freshly cracked black pepper to taste
Optional garnish: fresh parsley or basil leaves
Instructions
1. Shave the Asparagus:
Hold each asparagus spear by the woody end and use a vegetable peeler to shave it into long ribbons.
If very thin, slice diagonally into thin rounds instead.
2. Toast the Walnuts:
In a dry skillet over medium heat, toast the walnuts for 3–5 minutes until fragrant. Let cool slightly.
3. Make the Dressing:
In a small bowl, whisk together lemon juice, lemon zest, olive oil, salt, and black pepper.
4. Assemble the Salad:
In a large bowl, gently toss shaved asparagus with the dressing.
Add toasted walnuts and Parmesan just before serving. Garnish with herbs if using.
Chef’s Tips
Shaving Tip: If you find shaving tricky, blanch the asparagus for 30 seconds and then slice thinly.
Extra flavor: Add a few drops of balsamic glaze or a splash of white wine vinegar for depth.
Upgrade it: Add avocado slices or a poached egg for a more filling option.
