Zest of 1 lemon
2 tbsp lemon juice

Instructions
1. Prepare the Vegetables
1. Preheat oven to 425°F (220°C).
2. In a large bowl, toss carrots and fennel wedges with olive oil, garlic, oregano, coriander, salt, and pepper.
