1 red onion, cut into wedges

4 cloves of garlic, minced

3 tablespoons extra-virgin olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley, chopped, for garnish

 

 INSTRUCTIONS:

Preheat the oven to 425°F (220°C).

Combine the zucchini, bell peppers, eggplant, cherry tomatoes, and red onion in a large bowl.
