4 cups vegetable broth (or water with a bouillon cube)
3–4 cups chopped kale (stems removed)

Instructions
1. Sauté aromatics:
In a soup pot, heat olive oil over medium heat. Add chopped onion and sauté 4–5 minutes until soft. Stir in garlic and cook 1 minute more.
2. Add potatoes and spices:
Add diced potatoes, oregano, thyme, paprika, salt, and pepper. Stir for a minute to coat.
3. Simmer:

4. Add kale:
Stir in chopped kale and cook another 5–7 minutes, until wilted and tender.
