Ingredients:
2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
1 cup feta cheese, crumbled
1/2 cup ricotta cheese (or cottage cheese)
2 large eggs
2 cloves garlic, minced
1/2 medium onion, finely chopped
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
Salt and pepper, to taste
1/2 cup sun-dried tomatoes, chopped (optional)
1/4 cup olives, pitted and sliced (Kalamata or green olives)
1 cup breadcrumbs (for topping)
2 tablespoons olive oil (for drizzling)
Fresh parsley or basil for garnish (optional)
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a baking dish (approximately 8×8 inches).
Saute the Onions and Garlic:
In a skillet over medium heat, add a splash of olive oil.
Saute the chopped onion until translucent, about 3-5 minutes.
Add the minced garlic and cook for another minute until fragrant. Remove from heat and let cool slightly.
Prepare the Filling:
In a large mixing bowl, combine the chopped spinach, feta cheese, ricotta cheese, eggs, sauteed onions and garlic, sun-dried tomatoes, olives, oregano, basil, thyme, salt, and pepper.

Transfer to Baking Dish: Pour the spinach and cheese mixture into the prepared baking dish, spreading it evenly.
Add Topping: In a small bowl, combine the breadcrumbs with a drizzle of olive oil until the breadcrumbs are lightly coated. Sprinkle the breadcrumb mixture evenly over the top of the spinach filling.
Bake: Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and the filling is set.
