Mediterranean Tomato N Olive Salad

- 600g cherry tomatoes, halved
- 150g Kalamata olives, pitted
- A handful of fresh basil leaves, torn
- A handful of fresh parsley, chopped
- 1 small red onion, thinly sliced
- 4 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 clove garlic, minced
- Salt and freshly ground black pepper, to taste
- 4 thick slices of sourdough bread
Directions:
- Halved cherry tomatoes, chopped parsley, chopped basil leaves, and Kalamata olives should all be combined in a big bowl.
- To make a dressing, combine the extra virgin olive oil, balsamic vinegar, minced garlic, salt, and black pepper in a separate bowl.
- Drizzle the tomato and olive mixture with the dressing, then gently toss to coat.
- Toast the sourdough bread pieces until crisp and golden brown. If desired, rub a clove of garlic over the toasted bread to add more flavour.
- To serve, pour the tomato and olive salad over the toasted bread that has been arranged on plates. Pour over any leftover dressing from the bowl.
- If wanted, garnish with more parsley or basil before serving.
