NO BAKE COOKIE CAKE

No-Bake Cookie Cake takes the classic no-bake cookie and turns it into a cake!

My son’s birthday was a last month. When I asked him what he wanted for dessert on his birthday he said that he wanted a no-bake cookie cake.

I was not sure exactly what he meant so I asked him a few questions.

He said he wanted me to make my no-bake cookie recipe and turn it into a cake.

I have made no-bake cookies into a bar with my no-bake cookie bar recipe but wasn’t sure how it would work as a cake. I had never seen it made into a cake recipe, but I was willing to give it a try.

So, here it is

Ingredients:

For the Cookie Base:

  • 3 cups quick oats
  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

For the Frosting:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Optional Toppings:

  • Chocolate chips
  • Sprinkles
  • Chopped nuts

Instructions:

For the Cookie Base:

  1. In a large mixing bowl, combine the quick oats and set aside.
  2. In a saucepan over medium heat, melt the butter. Add the sugar, milk, cocoa powder, and salt. Stir continuously and bring the mixture to a boil.
  3. Once the mixture is boiling, let it boil for about 1-2 minutes, stirring constantly.
  4. Remove the saucepan from the heat and stir in the vanilla extract.
  5. Pour the hot mixture over the quick oats in the mixing bowl. Stir until the oats are well coated.
  6. Press the mixture into a greased 9-inch round cake pan or a similar-sized dish. Use the back of a spoon to smooth the top.

For the Frosting:

  1. In a mixing bowl, beat together the softened butter, powdered sugar, cocoa powder, milk, and vanilla extract until smooth and creamy.
  2. Spread the frosting evenly over the cookie base in the cake pan.
  3. If desired, sprinkle chocolate chips, sprinkles, or chopped nuts on top for decoration.
  4. Place the cookie cake in the refrigerator to set for at least 2 hours, or until the frosting is firm.
  5. Once set, slice and serve the no-bake cookie cake. Enjoy!
