Ingredients
For the Salad:
2 cups cooked chicken breast, shredded or cubed
1 large ripe avocado
1 small cucumber, diced
½ red bell pepper, diced
¼ small red onion, finely chopped
2 tbsp fresh parsley or cilantro, chopped
1 tbsp olive oil
1 tbsp lemon or lime juice
Salt and black pepper, to taste
Optional: ½ tsp garlic powder or 1 minced garlic clove
Optional Add-Ins:
2 tbsp feta cheese
1 tbsp chopped walnuts or sunflower seeds for crunch
A handful of spinach or arugula for extra greens
Instructions
Prepare Chicken
Use cooked, shredded, or chopped chicken (grilled, roasted, or rotisserie all work).
If cooking fresh: season raw chicken with salt, pepper, and olive oil; pan-sear until golden and cooked through, then cool.
Mash the Avocado
In a large bowl, mash avocado with a fork until smooth but slightly chunky.
Add lemon juice, olive oil, and garlic powder; mix well.
Assemble Salad
Add chicken, cucumber, bell pepper, onion, and herbs to the bowl.
Gently toss everything to coat evenly in the avocado dressing.
Season with salt and pepper to taste.
Serve and Enjoy
Serve immediately or chill for 30 minutes for deeper flavor.
