Ingredients (Serves 6)
2 tbsp olive oil (or avocado oil)
1 large onion, chopped
3 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 medium zucchini, diced
1 cup green beans, trimmed & chopped
1 cup cabbage, shredded
1 medium sweet potato, peeled & cubed
1 can (14 oz) diced tomatoes (no salt added)
6 cups vegetable broth (low sodium preferred)
1 tsp turmeric powder
1 tsp paprika
1 tsp dried thyme (or oregano)
½ tsp ground black pepper
½ tsp sea salt (adjust to taste)
2 cups fresh spinach or kale (added at the end)
Juice of ½ lemon (optional, for brightness)
Fresh parsley or cilantro, chopped (for garnish)
Instructions
Step 1: Sauté Aromatics
Heat olive oil in a large pot over medium heat.
Add onion, garlic, carrot, and celery. Sauté for 5 minutes until softened.
Step 2: Add Veggies & Spices
Stir in zucchini, green beans, cabbage, and sweet potato.
Sprinkle in turmeric, paprika, thyme, pepper, and salt. Cook for 2 minutes to bloom the spices.
Step 3: Simmer
Add diced tomatoes and vegetable broth.
Bring to a boil, then reduce to a simmer.
Cover and cook for 20–25 minutes, until sweet potato and veggies are tender.
Step 4: Finish
Stir in spinach or kale and simmer another 2–3 minutes until wilted.
Add lemon juice for freshness.
Step 5: Serve
Ladle into bowls, garnish with parsley or cilantro, and enjoy warm.
