One Pot Smoked Halloumi Pasta
Ingredients:
200g pasta (penne, fusilli, or your favorite shape)
200g smoked halloumi, cut into cubes
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 can (400g) chopped tomatoes or passata
1 cup vegetable broth or water
1 tsp smoked paprika (to enhance the smoky flavor)
1/2 tsp chili flakes (optional)
Salt and pepper, to taste
Fresh basil or parsley, chopped (for garnish)
Grated Parmesan or extra halloumi to top (optional)
Instructions:
Heat the olive oil in a large deep pan or pot over medium heat.
Add the onion and cook until soft and translucent, about 3-4 minutes.
Add the garlic and smoked paprika; stir for 1 minute until fragrant.
Add the pasta, chopped tomatoes, and vegetable broth. Stir to combine.
Bring to a simmer, then cover and cook on medium-low heat for about 10 minutes, stirring occasionally to prevent sticking.
Check the pasta for doneness and add more broth or water if it looks dry or pasta isn’t fully cooked.
Once the pasta is almost done, stir in the smoked halloumi cubes and cook for another 3-4 minutes until the halloumi is heated through and slightly softened
Season with salt, pepper, and chili flakes (if using).
Serve hot, garnished with fresh basil or parsley and optionally some grated Parmesan or extra halloumi.
