Air fryer zucchini, corn and haloumi fritters It’s time to take the air fryer out! These veggie-packed, haloumi-topped, simple fritters will become your new dinner favourite Ingredients: two medium zucchini, finely shredded 225g of finely grated haloumi 150g (1 cup) of thawed frozen corn kernels Two lightly whisked Coles Australian Free Range Eggs 100g (2/3 cup) flour that self-raises Three teaspoons of freshly chopped oregano Coles Extra Virgin Olive Oil—optional drizzle Yoghurt made naturally, to serve additional sprigs of fresh oregano, to serve Instructions: Squeeze the extra juice from the zucchini with  your hands. Arrange the courgette in a dish. Add the corn and haloumi. Mix everything together. Create a well in the middle and pour in the  oregano, flour, and egg. Stir and season to fully incorporate.  Set an air fryer to 200°C for frying. Spoon the zucchini mixture onto the air fryer rack in tablespoon-sized portions. Cook until brown and crisp, about 8 minutes. Move to a platter. Proceed in two additional batches using the leftover mixture. Place the warm fritters onto a platter for serving. Yoghurt should be put in a small serving bowl. If using, sprinkle some black pepper on top of the yoghurt and drizzle with olive oil. Garnish with more oregano and serve. Ingredients: 150g softened butter 150g or 2/3 cup caster sugar Two tsp of coarsely shredded lemon peel One teaspoon ground cardamom Three Coles Free-Range Australian Eggs 225g or 1 1/2 cups self-raising flour 3/4 cup (210g) yoghurt with honey taste Zest from lemons to serve Lemon icing 10 grammes of softened butter 160g (one cup) of icing sugar mixture 1/2 tablespoon lemon juice  Instructions: Step 1: Grease a circular cake pan with a base  measurement of 20 cm, and line it with baking  paper. Beat the butter, sugar, cardamom, and lemon rind together with an electric mixer until they become pale and creamy. One egg at a time, add and beat thoroughly after each addition. Add yoghurt and flour, and stir. Transfer to the ready pan. Make the surface smooth.  step two,  set the air fryer to 180°C. Put the pan inside the air fryer’s basket.
