Parmesan Pumpkin Fritters Recipe
Ingredients:
2 cups grated pumpkin (fresh, peeled)
1/2 cup grated Parmesan cheese
2 eggs
1/2 cup all-purpose flour (or chickpea flour for GF option)
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp paprika or chili flakes (optional, for a kick)
2 tbsp chopped parsley or chives
Oil for shallow frying (vegetable or olive oil)
Instructions:
Prepare the Pumpkin:
Peel and grate fresh pumpkin. Squeeze out excess moisture using a clean kitchen towel.

In a large bowl, combine grated pumpkin, Parmesan, eggs, flour, garlic, salt, pepper, paprika, and herbs.
Mix until everything is well combined. The batter should be thick but spoonable. If too wet, add a little more flour.
Fry the Fritters:
Heat 2-3 tbsp oil in a nonstick skillet over medium heat.
Scoop heaped tablespoons of the mixture into the pan and flatten slightly.
Cook for 3–4 minutes per side, until golden and crisp.
Drain & Serve:
Transfer fritters to a paper towel-lined plate.
Serve hot with sour cream, yogurt dip, or aioli.
Optional Add-Ins:
A handful of grated zucchini (squeezed dry)
A pinch of nutmeg (pairs well with pumpkin)
Crumbled feta or diced green onions
