INGREDIENTS:

1 pint cherry tomatoes (halved)

1 red onion (thinly sliced)

1 cucumber (sliced into rounds)

1 cup white vinegar

1/2 cup water

2 tbsp sugar

1 tbsp salt

1 tsp black peppercorns

1/2 tsp red pepper flakes (optional)

2 cloves garlic (smashed)

1 tsp mustard seeds

Fresh dill (optional, for garnish)

INSTRUCTIONS:

Prepare the vegetables: Halve the cherry tomatoes, thinly slice the red onion, and slice the cucumber into rounds. Set aside.

In a small saucepan, combine the vinegar, water, sugar, salt, peppercorns, red pepper flakes (if using), garlic, and mustard seeds. Bring the mixture to a boil, then reduce the heat and simmer for 2-3 minutes until the sugar and salt dissolve.

Pack the vegetables into a clean jar, alternating layers of cherry tomatoes, onions, and cucumbers.

Pour the hot brine over the vegetables in the jar, making sure they are fully submerged. Add fresh dill for extra flavor if desired.

Seal the jar and let it cool to room temperature before refrigerating.
