Ingredients

For the Salad

1 cup quinoa, rinsed

2 cups water or vegetable broth

1 can (15 oz) black beans, rinsed & drained

1 ripe mango, diced

1 ripe avocado, diced

1 cup cherry tomatoes, halved

½ red bell pepper, diced

½ red onion, finely chopped

¼ cup fresh cilantro, chopped

For the Lime-Cilantro Dressing

3 tbsp olive oil

Juice of 2 limes (about ¼ cup)

1 tsp lime zest

1 tsp honey or agave

1 garlic clove, minced

½ tsp cumin

Salt & black pepper, to taste

Instructions

1. Cook the Quinoa

Combine quinoa and water (or broth) in a saucepan.

Remove from heat, let sit 5 minutes, then fluff with a fork. Allow to cool slightly.

In a large bowl, combine quinoa, black beans, mango, avocado, tomatoes, bell pepper, onion, and cilantro.
