Ingredients
1 package (450 g / 16 oz) cheese ravioli (fresh or refrigerated)
2 tbsp olive oil
3 cloves garlic, minced
1 bunch asparagus, trimmed and cut into 2-inch pieces
1 cup cherry tomatoes, halved
½ tsp dried oregano
½ tsp Italian seasoning
Salt and black pepper to taste
¼ cup grated Parmesan cheese
2 tbsp fresh basil or parsley, chopped
1 tbsp lemon juice (optional)
Instructions
Cook the ravioli
Boil ravioli in salted water according to package instructions (usually 3–4 minutes). Drain and set aside.
Sauté garlic and asparagus
Heat olive oil in a large skillet over medium heat. Add garlic and cook for 30 seconds.
Add asparagus and cook 3–4 minutes until slightly tender.
Add tomatoes
Stir in cherry tomatoes and cook 2–3 minutes until they begin to soften.
Combine ravioli
Add the cooked ravioli to the skillet. Toss gently so everything mixes well.
Season
Sprinkle oregano, Italian seasoning, salt, and black pepper.
Finish and serve
Add Parmesan cheese, fresh herbs, and a squeeze of lemon juice. Toss lightly and serve warm.
