Ingredients:
- 1 medium head cauliflower, cut into florets
- 1 can chickpeas, drained and rinsed
- 1 handful fresh cilantro, chopped
- 1 garlic clove, minced
- 1/2 inch fresh ginger, grated

- 1 bunch radishes, cut into quarters
- 2 tbsp lemon juice
- 1/2 tsp curry powder
- 1/2 tsp paprika
- 1 tbsp salt
- 1 pinch salt
- 1/2 tsp turmeric
- 1/2 cup olive oil
- 1 cup plain yogurt
- 2 tbsp water
Instructions
1. Preheat the oven to 400°F (200°C).
2. Cut the cauliflower into florets and the radishes into quarters.
3. In a bowl, combine the olive oil with curry powder, paprika, turmeric, and 1 tablespoon of salt. Stir to mix.
4. Spread the cauliflower, radishes, and chickpeas evenly on a baking sheet. Drizzle the spiced olive oil over them, tossing to ensure everything is well-coated.
5. Roast for 20-25 minutes, or until golden and tender-crisp.
6. While the vegetables are roasting, prepare the mint yogurt sauce by combining the yogurt, lemon juice, garlic, ginger, mint, and 2 tablespoons of water in a bowl. Stir until smooth.
