Roasted Pears with Blue Cheese & Walnuts
Ingredients (serves 2–4):
2 ripe but firm pears (Bosc or Anjou work great)
1–2 tsp olive oil or butter
60g (about 2 oz) blue cheese (Gorgonzola, Roquefort, or Stilton)
¼ cup walnuts, roughly chopped
Optional: honey or balsamic glaze, for drizzling
Optional: fresh thyme or arugula, for garnish
Instructions:
Preheat oven to 375°F (190°C).
Prepare the pears:
Cut pears in half lengthwise.
Use a spoon or melon baller to scoop out the core and seeds.
Lightly brush the cut sides with olive oil or melted
Roast:
Place pears cut-side up in a baking dish.
Roast for 20–25 minutes, or until tender but still holding their shape.
Add cheese and nuts:
Remove pears from the oven.
Fill the hollowed centers with a spoonful of blue cheese.
Sprinkle walnuts on top.
Return to the oven for another 5–7 minutes, just until the cheese is melty and the nuts are lightly toasted.
Finish:
Drizzle with honey or balsamic glaze (optional).
Garnish with a few thyme leaves or serve on a bed of arugula for contrast.
Serving Suggestions:
Serve warm as a starter, salad, or even a light dessert.
Pairs beautifully with white wine like Sauvignon Blanc or a chilled Port if you’re doing it as a dessert.
