Ingredients:

(Serves 4)

4 salmon fillets (6 oz each, skin-on or skinless)

2 tbsp olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1 tsp dried oregano

1 tsp dried thyme

½ tsp salt (or to taste)

½ tsp black pepper

½ tsp crushed red pepper flakes (optional for heat)

1 tbsp lemon juice

1 tsp Dijon mustard

½ tsp honey or maple syrup (optional for balance)

Fresh parsley (for garnish)

Lemon wedges (for serving)

Instructions:

Step 1: Preheat Oven

Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper or lightly grease it with oil.

Step 2: Prepare the Seasoning

In a small bowl, mix garlic powder, onion powder, paprika, oregano, thyme, salt, black pepper, and red pepper flakes (if using).

In a separate small bowl, whisk together olive oil, lemon juice, Dijon mustard, and honey.

Step 3: Season the Salmon

Pat the salmon fillets dry with a paper towel to help the seasoning stick.

Brush each fillet evenly with the olive oil mixture.

Generously sprinkle the dry seasoning blend over the salmon, pressing gently to adhere.

Step 4: Roast the Salmon

Place the salmon fillets on the prepared baking sheet, skin-side down (if using skin-on).

Roast in the preheated oven for 12-15 minutes, depending on the thickness of your fillets.

The salmon is done when it flakes easily with a fork and reaches an internal temperature of 125-130°F (52-55°C) for medium-rare or 140°F (60°C) for well-done.

Step 5: Broil for a Crispy Top (Optional)

For a slightly crispier top, switch the oven to broil and cook for an additional 1-2 minutes.

Step 6: Garnish and Serve

Remove from the oven and let the salmon rest for 2-3 minutes.

Garnish with fresh parsley and serve with lemon wedges.
