Sautéed Zucchini

Ingredients:

1 Tbsp olive oil

2 Tbsp butter

1 medium yellow onion, chopped

8 oz white button mushrooms, stems trimmed and quartered

3 medium zucchini, cut into bite-size chunks

2 cloves garlic, minced

1 tsp Italian seasoning

¼ tsp red pepper flakes (adjust to taste)

Kosher salt and freshly ground black pepper, to taste

Instructions

Heat the Pan:

Heat the olive oil and butter in a large skillet over medium heat until the butter is melted and sizzling.

Cook the Onion and Mushrooms:

Add the chopped onion and quartered mushrooms to the skillet. Sauté for 5–7 minutes, stirring occasionally, until the onion is softened and the mushrooms are lightly browned.

Add the Zucchini:

Stir in the zucchini chunks and cook for 5–7 minutes, stirring occasionally, until they begin to soften but still hold their shape.

Season the Vegetables:

Add the minced garlic, Italian seasoning, and red pepper flakes to the skillet. Stir well to coat the vegetables in the seasoning. Cook for an additional 1–2 minutes, until the garlic is fragrant.

Adjust Seasoning:

Taste and season with kosher salt and freshly ground black pepper as needed.

Serve Hot:

Transfer the sautéed zucchini to a serving dish. Garnish with fresh herbs if desired and serve immediately.
