Savory Spinach, Avocado & Feta Oat Pancakes

Ingredients
For the pancakes:
1 cup rolled oats
1 cup fresh spinach, lightly packed
1 small ripe avocado (½ mashed into batter, ½ for topping)
½ cup milk (dairy or plant-based)
1 large egg (or flax egg for vegan)
½ tsp baking powder
½ tsp salt
¼ tsp black pepper
2 tbsp crumbled feta cheese (plus extra for topping)
1 tbsp olive oil (plus extra for cooking)
Optional toppings:
Extra feta crumbles
A drizzle of olive oil or yogurt
Fresh herbs: dill, parsley, or chives

Instructions
1. Prepare the batter
Blend oats into a flour using a blender.
Add spinach, half the avocado (mashed or cubed), milk, egg, baking powder, salt, and pepper. Blend until smooth and green.
Fold in feta crumbles gently.
2. Cook the pancakes
Heat a nonstick skillet with a drizzle of olive oil over medium heat.
Pour small rounds of batter (about ¼ cup each).
Cook 2–3 minutes per side until golden and set.
3. Assemble
Stack pancakes on plates.
Top with remaining avocado slices, extra feta, herbs, and a squeeze of lemon.
Optionally add a spoonful of yogurt or drizzle of olive oil.
Notes & Tips
For extra creaminess, blend all of the avocado into the batter.
Add garlic powder or minced garlic to the batter for deeper flavor.
Vegan option: use flax egg + vegan feta.
Make it a brunch plate by adding a fried or poached egg on top.
