Savory Stuffed Sweet Potatoes with Spinach, Mushroom & Feta

A warm, cozy Mediterranean-inspired meal featuring roasted sweet potatoes filled with a savory mixture of garlic sauteed mushrooms, wilted spinach, creamy feta, and herbs. It’s vegetarian, non-spicy, nutritious, and perfect for lunch or dinner.

Ingredients

For the Sweet Potatoes

2 medium sweet potatoes

1 tbsp olive oil

Salt + black pepper

For the Filling

1 tbsp olive oil

1 small onion, finely chopped

2 garlic cloves, minced

1½ cups mushrooms, sliced (button or cremini)

2–3 cups fresh spinach

¼ tsp dried oregano

¼ tsp paprika

Salt + pepper to taste

¼–⅓ cup feta cheese, crumbled

Optional: 1 tbsp lemon juice for brightness

Optional Toppings

Extra feta

Chopped parsley

A drizzle of tahini or Greek yogurt

Toasted pine nuts or walnuts

Instructions

1. Roast the Sweet Potatoes

Preheat oven to 200°C (400°F).

Wash sweet potatoes, prick with a fork several times, rub with olive oil, salt, and pepper.

Place on a baking sheet and roast 40–45 minutes until soft.

Let cool slightly, then carefully slice open and fluff the inside with a fork.

2. Prepare the Savory Filling

Heat 1 tbsp olive oil in a pan over medium heat.

Add chopped onion and saute 3 minutes until soft.

Add garlic and mushrooms; cook 6–8 minutes until mushrooms release water and become golden.

Add spinach and cook 1–2 minutes until wilted.

Season with oregano, paprika, salt, and pepper.

Stir in crumbled feta and turn off heat. Add a splash of lemon juice if desired.

3. Assemble

Spoon the warm spinach–mushroom–feta mixture into each roasted sweet potato.

Top with extra feta or herbs if you like.

Serve warm.

Notes

Works with white potatoes too, but sweet potatoes give natural sweetness that matches feta perfectly.

You can prep the filling ahead and roast potatoes fresh for best flavor.

To make it more filling, serve with a side of quinoa or rice.
