Sesame Ginger Chicken Stir-Fry with Vegetables

This Sesame Ginger Chicken Stir-Fry is a quick, flavorful, and healthy dish packed with tender chicken, crisp vegetables, and a savory-sweet ginger sesame sauce. It’s perfect for a busy weeknight dinner and pairs beautifully with rice, noodles, or a low-carb option like cauliflower rice.

Ingredients 

For the Chicken:

1 lb (450g) boneless, skinless chicken breast or thighs, sliced into thin strips

1 tbsp cornstarch (optional, for extra tenderness)

½ tsp salt

½ tsp black pepper

1 tbsp sesame oil or olive oil

For the Sauce:

¼ cup low-sodium soy sauce (or tamari for gluten-free)

1 tbsp honey or brown sugar

1 tbsp rice vinegar (or apple cider vinegar)

1 tbsp sesame oil

1 tbsp fresh ginger, grated (or ½ tsp ground ginger)

2 cloves garlic, minced

1 tsp sriracha or red pepper flakes (optional for spice)

1 tsp cornstarch mixed with 2 tbsp water (to thicken)

For the Vegetables:

1 cup broccoli florets

1 bell pepper (red or yellow), sliced

1 medium carrot, julienned

½ cup snap peas or green beans

½ cup mushrooms, sliced (optional)

2 green onions, sliced (for garnish)

1 tbsp sesame seeds (for garnish)

Instructions

1. Prepare the Chicken:

1. In a bowl, toss the sliced chicken with cornstarch, salt, and black pepper.

2. Heat 1 tbsp olive oil in a large pan or wok over medium-high heat.

3. Add chicken and stir-fry for 4-5 minutes until golden and cooked through.

4. Remove from the pan and set aside.

2. Cook the Vegetables:

1. In the same pan, add a little more  olive oil if needed.

2. Stir-fry carrots, broccoli, bell pepper, snap peas, and mushrooms for 3-4 minutes until slightly tender but still crisp.

3. Make the Sauce & Combine:

1. In a bowl, whisk together soy sauce, honey, vinegar, sesame oil, ginger, garlic, and sriracha.

2. Pour the sauce into the pan with the vegetables and stir.

3. Add the cooked chicken back in and mix well.

4. Stir in the cornstarch slurry to thicken the sauce. Cook for another 1-2 minutes until the sauce coats everything.

4. Serve & Garnish:

1. Remove from heat and sprinkle with sesame seeds and green onions.

2. Serve hot over rice, quinoa, or noodles.
