Simple Baked Salmon Plate with Sweet Potato & Sautéed Spinach

A clean, nourishing, and beautifully balanced meal! Tender baked salmon pairs perfectly with naturally sweet steamed (or baked) sweet potato rounds and vibrant sautéed spinach. Simple flavors, high nutrition, and easy to prepare—perfect for lunch or dinner.

Ingredients

For the Salmon

1 salmon fillet

1 tbsp olive oil

Salt & black pepper, to taste

½ tsp garlic powder (optional)

1 tsp lemon juice

For the Sweet Potatoes

1 medium sweet potato, sliced into rounds

Pinch of salt

For the Spinach

1–2 cups fresh spinach

1 tsp olive oil

Salt & pepper, to taste

Optional: a tiny pinch of garlic powder

Directions

1. Prepare the Salmon

Preheat oven to 200°C (390°F).

Rub salmon with olive oil, salt, pepper, and lemon juice.

Bake for 12–15 minutes until flaky and tender.

2. Cook the Sweet Potatoes

Steam for 12–15 minutes until soft, or

Bake in the oven for 20–25 minutes until tender.

Sprinkle a little salt.

3. Sauté the Spinach

Heat olive oil in a pan.

Add spinach and cook 1–2 minutes until wilted.

Season lightly with salt and pepper.

4. Plate & enjoy

Add salmon, sweet potato rounds, and sautéed spinach to the plate.
