Simple Sautéed Vegetables
Ingredients:
- 2 medium carrots, peeled and sliced
- 1 small zucchini, sliced into half circles
- 1 small summer squash, sliced into half circles
- 1 large bell pepper, cut into medium pieces
- 1 tablespoon grapeseed olive oil
- ½ teaspoon oregano
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ⅓ teaspoon salt (or to taste)
- ¼ teaspoon pepper (or to taste)
- 1 tablespoon Olive Oil
- 2 tablespoons chopped dill or parsley (for garnish)
Instructions:
Heat the Oil:
In a large skillet, heat the grapeseed oil over medium heat.
Cook the Carrots:
Add the sliced carrots to the skillet first, as they take the longest to cook. Sauté for about 3-4 minutes, stirring occasionally.
Add the Zucchini, Squash, and Bell Pepper:
Add the zucchini, summer squash, and bell pepper to the skillet. Stir everything together and cook for an additional 5-7 minutes until the vegetables are tender but still slightly crisp.
Season the Vegetables:
Sprinkle the oregano, garlic powder, paprika, salt, and pepper over the vegetables. Stir to coat the vegetables evenly with the seasoning.
Add Olive oli:
Add the plant Olive Oil to the skillet and stir until it melts and coats the vegetables, giving them a nice, rich flavor.
Finish and Serve:
Once the vegetables are cooked to your desired level of tenderness, remove the skillet from the heat.
Garnish the sautéed vegetables with chopped dill or parsley.
