Chicken

4 boneless, skinless chicken breasts (or thighs)

Black pepper, to taste

1 tsp dried Italian seasoning

2 tbsp olive oil

Sauce

3 cloves garlic, minced

⅓ cup sun-dried tomatoes (oil-packed, drained & sliced)

½ cup chicken stock (or water)

¼ cup cream or half-and-half

2 cups fresh spinach

2 tbsp grated Parmesan cheese

For Finishing

Fresh basil or parsley, chopped

Lemon wedges

Instructions

1. Season & Sear Chicken

Season chicken with salt, pepper, and Italian seasoning.

Heat olive oil in a large skillet over medium heat.

Sear chicken 4–5 minutes per side until golden and nearly cooked.

Remove chicken and set aside.

2. Build the Sauce

In the same pan, add garlic and sauté for 30 seconds.

Add sun-dried tomatoes and stir for 1 minute.

Pour in chicken stock and scrape up any browned bits.

3. Simmer

Stir in cream (if using).

Return chicken to the pan.

Simmer gently for 6–8 minutes until chicken is cooked through.

4. Add Spinach

Add spinach and cook 1–2 minutes until wilted.

Sprinkle Parmesan if using.

5. Finish & Serve

Taste and adjust seasoning.

Garnish with fresh herbs and serve warm.
