Slow Cooker Beef Barley Soup
This simple slow cooker dish, Slow Cooker Beef Barley Soup, is ideal for fall or winter! stuffed with juicy meat pieces and delicious veggies.
Ingredients;
- 1 tablespoon oil
- one pound of stewing beef
- one tiny, finely chopped onion
- Add 2 teaspoons of minced garlic
- 1 teaspoon each of salt
- 1 teaspoon Italian seasoning
- 1/4 teaspoon of black pepper
- Peel and chop 3 large carrots
- chop 2 ribs of celery
- rinse 1/2 cup of pearl or pot barley
- add 2 tablespoons of tomato paste
- add 2 bay leaves
- pour 4 cups of low-sodium beef broth
- Garnish with fresh parsley before serving.
Instructions:
- A big pan should be heated to medium-high heat. Give the oil a minute to warm up.Over medium-high heat.
- brown meat in batches, leaving space between each piece. Take out of the pan and transfer to a 4- to 6-quart slow cooker.
- The onions will absorb all the brown pieces from the beef when they are cooked over medium heat. Add the onions to the sauté pan and fry! Add the garlic, pepper, salt, and Italian seasoning, and sauté for one minute.
- Place the onions, carrots, celery, barley, tomato paste, and bay leaves in the slow cooker over the beef.
- After giving everything a good swirl, add the beef broth.
- Once the barley and veggies are soft, cover and simmer for 6–8 hours on low or 3–4 hours on high.
As desired, stir in fresh parsley and adjust seasoning. Assist.
How to Make the Best Beef Barley Soup in a Slow Cooker:
- Usually, I don’t think recipes should have more stages. However, in this instance, I chose to brown the meat before adding it since I believe this seals in the liquids and gives the meat a better texture after cooking it for a long time. It gives the soup more taste as well! Should you need to, you can omit this step.
- Here, you can adjust the vegetables to your family’s preferences: Before serving, you can exclude some or add your other favourites, such as frozen peas or corn, or add peppers, spinach, mushrooms and kale.
