4–5 chicken thighs or breasts (bone-in or boneless)
3 medium carrots, cut into chunks
2 medium potatoes, cut into chunks
1 bell pepper, sliced (optional)
1 cup green beans, trimmed (add in last 30 mins)
1 small onion, sliced
4 garlic cloves, minced
Honey Garlic Sauce:
½ cup honey
¼ cup low-sodium soy sauce
2 tbsp ketchup (adds tang and thickness)
2 tbsp olive oil
½ tsp dried thyme or Italian seasoning
¼ tsp black pepper
½ tsp chili flakes (optional, for slight heat)
Instructions
1. Prepare slow cooker: Place carrots, potatoes, onion, and bell pepper at the bottom.
2. Add chicken: Lay chicken pieces on top of vegetables.
3. Make sauce: In a bowl, whisk honey, soy sauce, ketchup, olive oil, garlic, thyme, and pepper.
4. Pour over: Drizzle sauce evenly over chicken and veggies.
