Slow Cooker Welsh Lamb Hotpot

- Two teaspoons of butter
- Two teaspoons of flour for all purposes
- Two teaspoons of sauce from Worcestershire.
- Tomato paste, one tablespoon
- One tsp finely chopped fresh garlic
- Two cups of stock, either lamb or chicken
- Two carrot cubes
- Two cubed parsnips
- Two bay leaves
- Three potato slices
- 1 teaspoon of fresh thyme
- 1 tablespoon of melted butter for brushing
- Rosemary sprig for garnish
- Optional: 1/2 tablespoon of cranberry sauce
- Salt and pepper to taste

- Use salt and pepper to season the lamb. In hot vegetable oil, brown the lamb in batches and set aside.
- In the same pan, soften onions and leeks by sautéing them in butter.

- Fill the slow cooker with the lamb, leftover stock, sautéed mixture, parsnips, carrots, and bay leaves.

- In the slow cooker, simmer on high for seven to eight hours.
- Toss potato slices in melted butter and broil for five to seven minutes, or until crisp.
