  4. Two tsp oil
  5. Two teaspoons of butter
  6. Two teaspoons of flour for all purposes
  7. Two teaspoons of sauce from Worcestershire.
  8. Tomato paste, one tablespoon
  9. One tsp finely chopped fresh garlic
  10. Two cups of stock, either lamb or chicken
  11. Two carrot cubes
  12. Two cubed parsnips
  13. Two bay leaves
  14. Three potato slices
  15. 1 teaspoon of fresh thyme
  16. 1 tablespoon of melted butter for brushing
  17. Rosemary sprig for garnish
  18. Optional: 1/2 tablespoon of cranberry sauce
  19. Salt and pepper to taste

Instructions For Slow Cooker Welsh Lamb Hotpot:

  • Use salt and pepper to season the lamb. In hot vegetable oil, brown the lamb in batches and set aside.
  • In the same pan, soften onions and leeks by sautéing them in butter.
  • Add the tomato paste, garlic, Worcestershire sauce, flour, and, if using, cranberry sauce.
  • Fill the slow cooker with the lamb, leftover stock, sautéed mixture, parsnips, carrots, and bay leaves.
  • Arrange the sliced potatoes on top and sprinkle thyme, salt, and pepper over them.
  • In the slow cooker, simmer on high for seven to eight hours.
  • Toss potato slices in melted butter and broil for five to seven minutes, or until crisp.
