Ingredients:

For the Fried Chicken:

2 boneless, skinless chicken breasts (sliced into tenders or thin strips)

1 cup of milk

1 cup all-purpose flour

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

Olive oil for frying

For the Lasagna Rolls:

8 lasagna noodles, cooked al dente

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg

1 tsp Italian seasoning

Salt and pepper to taste

1 1/2 cups marinara or Alfredo sauce (your choice — or a mix!)

Fresh parsley (for garnish)

Instructions:

1. Marinate chicken:

Soak chicken pieces in buttermilk for at least 30 minutes (or overnight for max tenderness).

2. Cook lasagna noodles:

Boil noodles until al dente. Drain and lay flat on parchment paper.

3. Mix cheese filling:

In a bowl, combine ricotta, mozzarella, Parmesan, egg, Italian seasoning, salt, and pepper.

4. Bread and fry chicken:

In a shallow bowl, mix flour with paprika, garlic powder, salt, and pepper.

Dredge chicken in flour mixture and fry in hot oil (350°F / 175°C) until golden and cooked through (about 3–4 mins per side). Drain on paper towels.

5. Assemble rolls:

Spread 2–3 tablespoons of cheese mixture onto each noodle. Place a piece of fried chicken on top and roll tightly.

6. Bake:

Spoon sauce into a greased baking dish. Place rolls seam side down. Top with more sauce and cheese if desired.

Bake at 375°F (190°C) for 20 minutes until bubbly and golden on top.

7. Serve:

Garnish with chopped parsley and extra Parmesan.
