Spicy Chicken Fajita Pasta Bowl with Guacamole and Greens
This spicy chicken fajita pasta bowl combines tender, smoky chicken with sautéed bell peppers and onions, tossed in a creamy fajita-spiced sauce over pasta. It’s served with fresh guacamole and a bed of crisp greens for a perfect balance of heat, creaminess, and freshness.

Ingredients
For the Chicken Fajita Pasta
2 medium chicken breasts, thinly sliced
2 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 red onion, thinly sliced
3 cloves garlic, minced
2 tsp fajita seasoning (or use 1 tsp paprika + ½ tsp cumin + ½ tsp chili powder + salt + pepper)
½ tsp red chili flakes
½ cup chicken broth
1 cup milk or cream
½ cup grated cheddar
250 g penne or fettuccine pasta
Salt & pepper to taste
Juice of ½ lime
For the Guacamole
2 ripe avocados
1 small tomato, finely diced
1 tbsp red onion, minced
1 tbsp lime juice
1 tbsp cilantro, chopped
Salt & pepper to taste
For the Greens
2 cups mixed salad greens (spinach, arugula, or lettuce)
1 tbsp olive oil
1 tsp lemon juice
Pinch of salt
Instructions
1. Cook the Pasta
Bring a pot of salted water to a boil.
Add pasta and cook until al dente. Drain and set aside, reserving ½ cup of pasta water.
2. Cook the Chicken
In a large skillet, heat 1 tbsp olive oil over medium-high heat.
Add chicken slices, fajita seasoning, and chili flakes.
Cook 5–6 minutes until golden and cooked through. Remove and set aside.
3. Saute Veggies
In the same pan, add another tbsp of olive oil.
Add bell peppers, onions, and garlic.
Saute 4–5 minutes until slightly soft but still crisp.
4. Make the Creamy Sauce
Lower heat to medium. Add chicken broth and milk. Stir and let it simmer for 2 minutes.
Add cheddar cheese and mix until creamy.
Toss in cooked pasta and chicken. Add a splash of pasta water if sauce thickens too much.
Season with salt, pepper, and lime juice.
5. Prepare the Guacamole
Mash avocados in a bowl.
Add tomato, onion, lime juice, salt, pepper, and cilantro. Mix well and keep chilled.
6. Toss the Greens
In a small bowl, toss greens with olive oil, lemon juice, and a pinch of salt.
7. Assemble the Bowl
Layer greens at the base of a bowl.
Add a serving of spicy chicken fajita pasta.
Top with a generous spoon of guacamole.
Optional: Garnish with sliced jalapenos, lime wedges, or cilantro.
Tips
For extra flavor, grill the chicken instead of pan-cooking.
Add black beans or corn for a more Tex-Mex twist.
Use Greek yogurt instead of cream for a lighter version.
Adjust spice levels by reducing or increasing chili flakes.
Serving Suggestion
