Tender roasted Brussels sprouts are glazed with a sticky-sweet-spicy maple Sriracha sauce, then skewered and finished on the grill or in the oven. These skewers make a fantastic appetizer, party snack, or veggie side dish with a flavor punch.

Ingredients

1 lb (450 g) Brussels sprouts, trimmed and halved

2 tbsp olive oil

Salt & black pepper to taste

Wooden or metal skewers

Glaze

3 tbsp pure maple syrup

2 tbsp Sriracha (adjust for spice level)

1 tbsp soy sauce (or tamari for gluten-free)

1 tsp rice vinegar or apple cider vinegar

2 garlic cloves, minced

½ tsp smoked paprika

Instructions

Prep sprouts

Bring a pot of salted water to boil.

Blanch Brussels sprouts for 3–4 minutes until just tender, then drain and pat dry.

Season & skewer

Toss sprouts with olive oil, salt, and pepper.

Thread onto skewers (flat side facing same direction for even grilling).

Make glaze

In a bowl, whisk maple syrup, Sriracha, soy sauce, vinegar, garlic, and smoked paprika.

Cook sprouts

Oven method: Roast skewers at 400°F (200°C) for 15–18 minutes, brushing with glaze halfway through.

Grill method: Grill over medium heat for 10–12 minutes, turning and brushing with glaze until charred and caramelized.
