Inspired by the streets of Bangkok, this salad combines the juiciest chicken breast, crunchy vegetables, and fragrant herbs, all tossed in a zesty and spicy dressing made with chili peppers, fish sauce, lime juice, and palm sugar.

Ingredients 

2 cups cooked, shredded chicken

1 cup cucumber (thinly sliced)

1 cup carrots (julienned)

1/4 cup roasted peanuts

2 tbsp fresh cilantro (chopped)

1-2 dried red chilies (optional for garnish)

For the Dressing:

3 tbsp soy sauce

2 tbsp rice vinegar

1 tbsp sesame oil

1 tbsp lime juice

1 tbsp sriracha or chili sauce

1 tsp honey

Directions 

 Make the dressing:

In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, lime juice, sriracha, and honey. Adjust spice level to your taste.

 Assemble the salad:

In a large bowl, combine shredded chicken, cucumber slices, julienned carrots, and roasted peanuts.

Add the dressing:

Pour the dressing over the salad and toss until everything is evenly coated.

 Garnish:

Top with fresh cilantro and dried red chilies for an extra kick (optional).
