Spinach Blueberry Salad:
A creamy blueberry tahini dressing envelops a heaping serving of vegetables, fresh blueberries, chickpeas, raisins, and toasted sunflower seeds in this spinach blueberry salad.
Salads are really simple to put together and come in an endless variety of combinations. I wanted to make a nutrient-dense, plant-based salad today that included baby spinach and fresh blueberries. It had to be large (my salad maxim is “go big or go home”), tasty, vibrant, satisfying, and, of course, mouthwatering.

Ingredients For Spinach Blueberry Salad:
- Four cups baby spinach.
- Half a cup sliced cucumbers.
- One-half cup cooked chickpeas.
- One cup of shredded red cabbage.
- One cup of fresh blueberries.
- Two tablespoons of chopped red onion.
- One tablespoon of chopped avocado.
- Two tablespoons of golden raisins.
- Two tablespoons of raw or roasted sunflower seeds.
DRESSING WITH FRESH BLUEBERRY:
- ½ cup
- ¼ cup lemon juice
- One teaspoon maple syrup.
- Two tablespoons olive oil.
- Two tablespoons tahini.
- One teaspoon sea salt, to taste.
- One tablespoon water, if necessary to thin.
Guidelines Spinach Blueberry Salad:
- In a blender, combine all the dressing ingredients and process until smooth and creamy. If the texture is too thick to drizzle, add a small amount of water (beginning with 1-2 Tablespoons). The dressing should be rather thick.
- Make two salads by tossing a bed of baby spinach with the toppings in the suggested sequence. After dressing both salads, savour them!
