SPINACH STUFFED SHELLS

This is the ultimate nutritious, hearty vegetarian dish that the whole family will love! A filling and satiating meatless dish that will make you feel full is spinach stuffed shells. My favourite and go-to recipe for a vegetarian supper!

Ingredients:

  1. Two (10 oz.) packets of thawed frozen chopped spinach
  2. One 12-oz bag of large pasta shells
  3. One Egg
  4. 15 ounces of ricotta
  5. Grated Parmesan cheese, ¼ cup
  6. Two cups of divided mozzarella cheese, shredded
  7. One tsp dried basil or one tablespoon chopped fresh basil
  8. 1 (24 oz.) jar marinara sauce (about 2 ½ c. total)
  9. Half a teaspoon of salt
  10. ½ tsp garlic powder

Instructions;

Step 1:

get the oven ready. Heat it to 350 degrees Fahrenheit. Grease a 9 x 13-inch dish with cooking spray.

Step 2:

Spoon half of the marinara sauce into the bottom of the prepared dish.
Step 3:

Cook the pasta according to the directions on the package. When the pasta is cooked, drain and then rinse with cold water.

Step 4:

Squeeze out as much liquid as possible from the spinach. To remove as much water as possible, use a dish towel. Next, transfer the spinach to a sizable bowl.

Step 5:

Combine the ricotta, egg, basil, salt, garlic powder, Parmesan, and 1 ½ cups of mozzarella with the spinach in the bowl. Thoroughly mix the ingredients using a fork. Add a small pinch of nutmeg if preferred. Stuff each shell with around two tablespoons of the spinach mixture.

Step 6:

Place the filled shell, open-side up, in the baking dish that has been prepared. Spoon the remaining marinara sauce over the top, then top with the remaining half cup of mozzarella.

Step 7:

Cover the dish with foil and pop it into the oven that has been prepared. Bake the filled shells for approximately half an hour, or until thoroughly cooked. Take off the cover during the last 5 to 10 minutes of baking. This will allow the cheese to firm up a little.
