Strawberry Arugula Salad
Ingredients:
4 cups fresh arugula, washed and dried
1 cup strawberries, hulled and sliced
1/4 cup crumbled goat cheese (or feta for a altier bite)
1/4 cup toasted pecans or sliced almonds
Optional: thinly sliced red onions or avocado
Balsamic Honey Vinaigrette:
3 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp honey or maple syrup
1/2 tsp Dijon mustard
Salt & pepper to taste
Instructions:
In a small bowl or jar, whisk together the vinaigrette ingredients. Taste and adjust sweetness or acidity as needed.
In a large bowl, combine arugula, strawberries, cheese, and nuts.
Drizzle with the vinaigrette just before serving and gently toss to coat.
Optional: top with extra strawberries or a sprinkle of fresh cracked black pepper.
