To Assemble
3 large whole-wheat or spinach tortillas

1. In a bowl, mix:

2. Assemble the Pinwheels
1. Lay one tortilla flat.
2. Spread a thin, even layer of the filling across the entire surface.
3. Roll tightly from one end to the other to form a log.
4. Repeat with remaining tortillas.
5. Chill rolls for 20 minutes — this makes slicing easier.

Slice each roll into ¾–1 inch pinwheels.
