Ingredients:

For the Chicken:

1 lb (450g) boneless, skinless chicken breast or thighs, cut into bite-sized pieces

1 tbsp soy sauce

1 tbsp cornstarch

1 tbsp oil (vegetable or sesame)

For the Sauce:

½ cup pineapple juice (from canned pineapple)

¼ cup soy sauce

2 tbsp honey or brown sugar

1 tbsp rice vinegar or apple cider vinegar

1 tbsp ketchup (for extra tang)

1 tsp grated ginger

2 cloves garlic, minced

1 tsp cornstarch (mixed with 1 tbsp water)

For the Stir-Fry:

1 cup pineapple chunks (fresh or canned)

1 red bell pepper, diced

1 green bell pepper, diced

½ small onion, chopped

2 green onions, chopped (for garnish)

Sesame seeds (optional, for garnish)

For the Rice:

2 cups cooked jasmine rice or brown rice

Instructions:

1. Marinate the Chicken: In a bowl, mix chicken pieces with soy sauce and cornstarch. Let sit for 10–15 minutes.

2. Make the Sauce: In a small bowl, whisk together pineapple juice, soy sauce, honey, vinegar, ketchup, ginger, garlic, and cornstarch mixture. Set aside.

3. Cook the Chicken: Heat oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until golden brown and fully cooked (about 5–6 minutes). Remove and set aside.

4. Saute Vegetables & Pineapple: In the same pan, add a little more oil if needed. Stir-fry onions, bell peppers, and pineapple chunks for about 2–3 minutes until slightly softened.

5. Add Sauce & Chicken: Pour in the sauce and stir until it thickens (about 1–2 minutes). Return the chicken to the pan, toss everything together, and let it cook for another 1–2 minutes.

6. Serve: Spoon the sweet and savory pineapple chicken over cooked rice. Garnish with chopped green onions and sesame seeds.
