Ingredients

2 medium sweet potatoes, peeled and cut into 1-inch cubes

8 oz (225 g) halloumi cheese, cut into 1-inch cubes

2 tbsp olive oil

Salt & black pepper, to taste

Wooden or metal skewers

Honey Lemon Glaze

3 tbsp honey

2 tbsp fresh lemon juice

1 tsp lemon zest

1 tbsp olive oil

½ tsp dried oregano (or 1 tsp fresh, chopped)

Pinch of chili flakes

Instructions

Pre-cook sweet potatoes

Bring a pot of salted water to boil.

Add sweet potato cubes and parboil for 6–7 minutes until just tender but not mushy. Drain well.

Prepare glaze

In a bowl, whisk together honey, lemon juice, zest, olive oil, oregano, and chili flakes. Set aside.

Assemble skewers

Alternate sweet potato cubes and halloumi cubes on skewers.

Brush lightly with olive oil and season with a little salt and pepper.

Cook skewers

Grill method: Grill over medium heat for 8–10 minutes, turning occasionally, until halloumi is golden and sweet potatoes are charred.

Oven method: Roast at 400°F (200°C) for 15–20 minutes, flipping halfway.

Glaze & serve

Brush skewers generously with honey lemon glaze in the last 2–3 minutes of cooking.
